Heat 1-1.5 cup (200g) ghee/oil in a large pot over medium-high heat. Add 4 medium finely sliced onions and fry till golden brown. 2. Add 1 kg Chicken/Mutton (cut into pieces), 4 tbsp Ginger Garlic Paste, 4 medium Tomatoes (finely sliced), 1 cup (250g) Curd, 2 Potatoes (250g, cut into pieces) & 1 packet Burhani Foods Authentic Bombay Biryani Masala and mix well. (This packet is the only thing you need to make this mouth-watering biryani. No need to add any extra masala or salt). 3. Mix well and sauté for 5 minutes. 4. Add 1 glass of water and bring to a boil. Lower the heat and simmer until the water dries up and oil separates from the gravy. The meat should be tender and cooked through. If not, add some more water and cook till done. 5 The chicken /mutton gravy is ready for layering. Step 2: Layering Rice and Gravy: 1. Add 2 liters of water in a large pot, add 4 tbsp salt and bring to a boil. Add 800g rice (soaked for 30 mins) and cook until rice is 3/4th done. Drain the rice and put it aside. 2. In another large pot, spread half of the rice evenly. Pour the chicken/mutton gravy over the rice and spread it evenly. Cover with the remaining rice. 3. Sprinkle 2 tbsp kewda water and 2 tbsp melted ghee over the rice. Cover the pot with a tight-fitting lid. 4. Place the pot on a tawa (flat pan) over low heat and cook for 15 to 20 minutes. This will allow the rice and gravy to steam together and infuse their flavors. 5. Remove the lid and gently fluff the rice with a fork. Your Authentic Bombay Biryani is ready to serve. 6. Enjoy it with a raita or salad of your choice. Servings: 6 to 8 people. ----------------------------------------------------------- Nutrition values per 60g (Approx).
